# Make a menu change clear for every shift

Approved recipe cards, old and new menu information and role responsibilities.

Updated October 27, 2026

## What is a menu change rollout with Elvina?

A menu change rollout with Elvina tells every kitchen shift what moved on the menu, and only that. Culinary directors at multi-location restaurant groups use it when a new recipe card set is approved. Elvina drafts a change kit for the affected dishes from the new cards, revises the line-station lesson and writes a pre-service check for shift leads. Your food safety manager verifies allergens and approves. Assigning the kit to each location and role is available now; answers to cooks in chat are planned, not available today.

## What happens on the free demo

- Book 30 minutes. Pick a time with Elvina's team. The demo is free and runs on Zoom.
- Show the team your goal. Bring one role or one procedure. The team shows how Elvina would handle it, using sample materials.
- Agree on the next step. You leave with a plan for the first step and its price. Nothing reaches your team until you approve it.

## Who this is for, and when

A culinary director at a fast-casual taco chain rolls out a fall menu across 26 locations in three weeks. Four dishes change, one has a new allergen, and every shift needs to know before the first order. The trigger is the approved recipe card set. She needs a change kit that highlights only what moved, revises the existing lesson, and adds a shift-lead check before service.

## How it works in Elvina

A change kit highlights affected dishes, revises a short lesson and adds a shift-lead check before use.

- The culinary director replaces the recipe card set in Company Knowledge with the fall version and keeps the summer set for comparison.
- Creation Studio produces a change kit listing the four affected dishes, revises the line-station lesson, and drafts a pre-service check for shift leads.
- The food safety manager verifies ingredient and allergen details on each affected card and approves the kit.
- The culinary director assigns the revised lesson to line cooks and the check to shift leads on the Learning Platform, staggered by region.
- Line cooks open the revised line-station lesson in the Web workspace during prep to confirm a build; asking Chat is planned, not available today.

## A worked example

A fictional chain, Cielo Taqueria, launches its fall menu with four changed dishes across 26 locations and about 310 kitchen staff. Sources are the Fall Recipe Cards, version 1, and the Summer Recipe Cards for diff. The new roasted-poblano item introduces a tree-nut allergen.

- A change kit covered only the four affected dishes instead of retraining staff on the entire menu.
- The food safety manager flagged the tree-nut allergen for a highlighted callout in the lesson.
- Shift leads completed the pre-service check at every location before the first fall order.

## What to check before relying on it

Have the responsible expert verify ingredient and allergen information. This workflow does not establish food-safety compliance.

- The change kit names exactly the dishes that changed and nothing else.
- Allergen information in the lesson matches the approved fall recipe cards.
- Every shift lead has a completed pre-service check on the launch date for their region.

## Where a person stays in charge

Elvina drafts the change kit from approved recipe cards; it does not verify ingredients, allergens, or food-safety compliance. The responsible expert approves before anything reaches a kitchen. The workflow itself does not establish regulatory compliance. Local health requirements remain the operator's responsibility.

## Who does what in menu change rollout

| Role on your team | What the person keeps | What Elvina drafts | Status |
|---|---|---|---|
| [HR generalist](/elvina/hr-recruiter) | Decides who is hired, when a new person starts and when they work alone | A plan for the first few days in each role and a readiness check for new hires | available now |
| [Trainer](/elvina/coach) | Coaches on the floor and judges whether the work is done right | Job aids and short quizzes for the task; the workspace shows who has completed them | available now |
| [Line manager](/elvina/coach) | Approves what reaches the team and follows up with anyone who falls behind | A progress digest by person and role | planned, not available today |
| [Instructional designer](/elvina/learning-team) | Sets the learning goal and checks the method and the wording | Draft lessons, courses and quizzes from your own documents | available now |

Nothing Elvina drafts reaches your team until a person on your side approves it.

## What Elvina does not do, and when another tool fits

### Elvina does not

- Verify ingredients, allergens or food-safety compliance; your responsible expert does.
- Replace food safety certification, a health inspection or your qualified food safety manager.
- Include undocumented local substitutions; only approved local cards reach a lesson.
- Send anything to a kitchen before the responsible expert approves it.

### Another tool fits better when

- The procedure itself is still being decided: settle it first, then train on the approved version.
- You need payroll, scheduling or an HR system of record: keep the one you have.
- A quick poll after a meeting is all you need: a survey form is enough.

## Questions

**Q:** What if a location has a substitute ingredient?

The location's variance must be added to Company Knowledge as an approved local card. Lessons draw only from approved sources, so an undocumented substitution will not appear, and Chat answers (planned, not available today) will follow the same rule.

**Q:** Can we roll back if a dish is pulled?

The director restores the prior card version and the affected lesson section is revised through the same review step.

**Q:** Can the change kit be translated for Spanish-speaking cooks?

Yes. Translation into more than 100 languages is available now, so the revised lesson and the shift-lead check can be issued in Spanish. Have a fluent reviewer check the allergen wording in the translated version before approval.

**Q:** Can a location launch the new menu later than the others?

Yes. Assignments can be set by location, so each one receives the revised lesson and the pre-service check before its own launch. Until then, that location keeps working from the cards and lesson it already has.
